This is incredibly delicious! I should note that Todd was not pleased that I served it without meat. He would have liked meatloaf as a main dish or Italian sausage added to the gnocchi and cauliflower. He did not feel that this qualified for a "main dish". When I sat down to post the recipe, I wasn't sure where to put it. My magazine called it a main dish. Whatever you call it, it was so so so good! Another suggestion Todd had for me was to double the cauliflower part of the recipe. I actually think that's a pretty good idea. In fact, if you wanted, the cauliflower could be a side dish itself without the gnocchi. Whatever category you decide to put it in, this recipe is definitely going into my recipe box. Can't wait to make it again. The kids liked it, too. Gee, that's a lot of preamble to a really simple recipe. Sorry. Let me try again... Make this!!! 1 head cauliflower, cut into florets 3 T olive oil sea salt, black peper 12 fresh sage leaves (My kitchen garden is fresh out of sage leaves at the moment, so I used the dried kind from the spice aisle at the grocery store...tasted fine!) 1 pound gnocchi (frozen or fresh) (Mine were frozen...would prefer to make my own.) Parmesan cheese Preheat oven to 400 degrees F. On a rimmed baking sheet, toss the cauliflower, oil, sea salt, pepper, and sage. Roast, tossing once (Mine was less "tossing" and more pushing around with a spatula), until the cauliflower is golden brown and tender, 25-30 minutes. (Mine took less than 25.) When cauliflower is almost done, cook the gnocchi according to package directions. Drain. Divide the gnocchi among the bowls. Top with cauliflower. Sprinkle with Parmesan. Ok, I should also mention that the recipe says that this feeds 4. I do wish that I had doubled the cauliflower part, at least. There were no leftovers. Although maybe if I had served it with meat there might have been. Sigh. Again, I will simplify... Just make this! :) |

| We eat lots of vegetarian meals so I'm glad you put this in the "main dish" category. That's exactly what it is :) I'm excited to try this, too! Meat's too expensive and I love gnocchi. |
