Todd's not a fan of this, but the kids and I enjoy it year-round.

1/2 cup oil
(I usually just use 1/2 cup plain applesauce and it works great!)
2 eggs, beaten
2 t baking powder
1 t salt
1 cup milk
1 cup sugar
(I use a scant 1/2 cup white and a scant 1/2 cup brown.)
3 cup rolled oats
(My recipe says "If using quick oats, use less liquid." But, I don't remember ever doing this. I don't know if that means I've never used quick oats or that I just don't pay attention. Ha. Good luck with this.)

*I always throw in different extra stuff, depending what we've got on hand...raisins, diced apples, dried cranberries, mashed bananas, nuts...whatever combination of stuff floats your boat. I don't usually alter the liquids, regardless of what extras I put in. I guess a fancier cook might have some guidelines for this sort of thing, but I don't.)

Mix all ingredients together and bake in 8x8 or 9x9 pan at 350 degrees for 30 minutes. Serve warm with milk. (I have made it in a round pie pan before, but I like it a little thicker, so I prefer it in the smaller square pan.)

Yum! Just typing this made me hungry for it. We'll have to eat some this week!
