We LOVE this salad and eat it all the time. It makes four 1 1/4 c servings at 151 cal/per serving. Matt and I eat the entire thing ourselves in one sitting. We don't feel guilty about it because of how low in calories it is! It's a great lunch or side salad at dinner. The dressing is to die for and I don't even like raw tomato guts.

1 c cubed whole-wheat bread
2 tsp extra virgin olive oil
4 med tomatoes, divided
3 T reduced fat mayo
2 T chives or scallions
2 tsp vinegar (we use whatever kind we have on hand)
1/4 tsp garlic powder (we use more)
Ground pepper to taste
5 c lettuce
3 slices bacon, cooked and crumbled

1. Preheat oven to 350. Toss bread with oil and spread on baking sheet. Bake turning once until golden brown, 15 to 20 minutes.
2. Cut 1 tomato in half. Over a large bowl, shred both halves using the large holes on a cheese grater. Discard the skin. Add mayo, chives (or scallions), vinegar, garlic powder and pepper; whisk to combine.
3. Chop remaining 3 tomatoes. Add the tomatoes, lettuce, and croutons to teh bowl with dressing; toss to coat. Sprinkle with bacon.
