I usually make and pressure can loads of "non-chunky" applesauce in the fall with Diane and her daughter and another lady from their church. It's fun to do and nice to do it with them because they have all the stuff and the people-power to make it in bulk. Hopefully we will do that again this year. However, my true applesauce love is the chunky kind. I have a wonderful little recipe that you just make in one saucepan and it serves our family nice sized bowls for dinner. I love to make this in the fall. It smells so good and tastes so yummy warm and my boys love it! Last year I tried all kinds of different apples...batches of all one kind of apple and batches of mixed varieties. Unfortunately, I never wrote down our favorites, so I'm going to try to do better with that this year. I haven't made any yet (the 90 degree weather this first week of September is really not putting me in a fall-ish frame of mind yet) but I am really looking forward to it. I will post my recipe if anyone is interested, and I can also report back on the flavor combinations that we prefer. |

| I was at Buehler's last night to pick up green chilies and garlic for Todd's salsa...and I couldn't resist the apples. I stood and looked at the bins of them in all their yummy goodness and debated which ones I should get first. I was kind of sad that I didn't write down our favorites from last year, but then I decided that it will just be fun to experiment this fall and to share our favorites with you guys. I ended up deciding on Galas...and I'm going to make some tonight. I will post the recipe this weekend. You can't believe how simple it is! |

Chunky Applesauce 4 medium apples - peeled and cut into fairly large pieces 3/4 cup water 1/4 cup sugar (I've used Splenda) 1/2 tsp cinnamon (and you don't have to add this if you don't want to) Put everything into a pot. Cook over Medium heat for 15-20 minutes. Mash with a fork. Enjoy! |

| I bought apples today to make applesauce this week. I looked it up online and it said to use a variety of sweet apples and that you might not even need the sugar. I'll still probably use it, or maybe taste it as I go... :) I got some Golden Delicious, Pink Lady, Fuji, and Gala. It also said online that you could make more and just double the spice in part of the batch and freeze it in the freezer if you don't have a canner. So after I try this I think that I'll probably make some and freeze it because I love chunky applesauce. |

| I didn't like the Gala applesauce very well. I just bought Fuji's tonight, so I will try those tomorrow. I did read that Jonathan and Cortland are both good applesauce apples. Pink Ladies are absolutely my most favorite apples of all. I should try applesauce with those. And, Jamey, thanks for the tip about using a combination of apples. I will try that next. Let me know what combo you try and how you like it. I really should freeze some, too! |

| Cael and I went downtown to the farmer's market yesterday morning in the pouring rain and had the best time wandering around together and playing in the puddles. I took your advice and bought three kinds of apples...Jonathan, Mollie, and Fujis. I made one batch yesterday and have enough apples to make at least 4-5 more batches today. I can't wait! It does feel very pioneer-ish, doesn't it! :) (I'm going to also take your advice and freeze some. I have a bunch of leftover freezer containers from when Todd did salsa last month!) |

| How did your applesauce turn out? What kind of apples did you use? I just got more apples today...Honey Crisp, Pink Lady (did I mention that this is my most favorite apple?), and McIntosh. I will be making at least 2 batches today. (Day 2 off of school this week because there is no power in Sterling after Ike came through!) |

| We all liked it. I think that I either needed a little more water or a little smaller pieces of my apples or maybe I needed to mash it more though because there was hardly any "sauce" it more like eating mushed apples, delicious mushed apples. :) I used two Washingtons, a pink lady and I don't remember what the last one was...either McIntosh or Gala. I'll definitely be making it again though and I'm going to freeze some too. The other good thing is that you don't have to have perfect, fresh apples to make applesauce and we buy apples every week so sometimes we end up with apples that aren't bad, but have their lost crunch and I don't know what to do with them. Now they will be applesauce apples. |

| My guess would be smaller pieces. Then more mashing. You shouldn't really need more water. I'm glad you liked it. I made two double batches today...and have apples left for 3 more single batches. This has been my favorite combination by FAR! Yum-o!!! |

I'm making applesauce this weekend. I can't wait! Please tell me what your favorite combos have been so I can try them. I did get the jam, Bonnie. I can't wait to try it! Matt puts too much on his PBJ so I have to hide it in the fridge from him. He calls me the Jam Nazi. I'm sorry I didn't ask for a jar of Todd's salsa! Homemade salsa sounds soooo good! |
